Protein activity refers to the functional, biochemical tasks performed by an estimated 900,000 differently structured proteins in biological systems, such as catalyzing reactions (enzymes), transporting molecules, signal transduction, and providing structural support, as well as hormones, antibodies, and more. It describes the active, functional state of a protein, not just its mere presence. Protein activity is essential for cellular activity. To form a protein, a chain of amino acids must be folded into a three-dimensional structure in a process called protein folding. This fundamental process enables all vital, protein-dependent biological processes. Water is the most abundant molecule in the body; it surrounds and fills all cells, in which up to thousands of proteins are embedded. A specific water state on the molecular surface is necessary to initiate protein folding.
